Ryan O’Flynn wins Gold Medal Plates
KELOWNA, B.C. — Westin Edmonton executive chef Ryan O’Flynn captured gold at the Canadian
Culinary Championships grand finale, which took place Feb. 7 at the Delta Grand Okanagan Resort and Conference Centre, in Kelowna, B.C.
O’Flynn took top honours at the event — the finale to the Gold Medal Plates competition — which saw chefs from 11 Canadian cities competing.
O’Flynn’s winning dish featured terrine of pine-smoked Alberta river sturgeon and cured Quebec foie gras, wild Northwest Territory morels, textures of Okanagan apples and toasted brioche, paired with Sandhill Small Lots 2013 Viognier. Joining him were members of the Westin Edmonton’s culinary brigade.
Antonio Park, of Park Restaurant, in Montreal, won silver and Kristian Eligh, of Hawksworth Restaurant, in Vancouver, took bronze.
Proceeds from Gold Medal Plates and the Canadian Culinary Championships go to the Canadian Olympic Foundation to support high-performance athletes, with more than $9.5 million raised to date.
